Detox Salad

Detox salads are a great way to fill your body up with the nutrients it is craving. Any type of eater can benefit from this recipe. It is filled with vegetables that contain a good amount of fiber and antioxidants. Also, each vegetable contributes its own special nutrients. For example, carrots are high in vitamin A, beets are high in folate, and ginger is high in gingerol (a great anti-inflammatory). In fact, a cup of raw beets contains about 37% of your needed daily value of folate. Also, a half cup of carrots can give you 73% of your daily value of vitamin A!

So now there should be very little holding you back from trying this detox salad recipe. It is PACKED with nutrients.

It is really important to buy organic produce. Pesticides have been scientifically shown to disrupt the endocrine system when ingested, and conventionally grown produce is HEAVILY sprayed with pesticides. Ingredients for Detox Salad:

  • Greens (like kale, spinach, chard, mixed greens, cabbage, arugula, whatever greens you have, use 1-3 cups )
  • Shredded Carrot ( I use a cheese grater to shred my carrots and my beets, use 1-2 long carrots)
  • Shredded Beet ( red or golden, use 1/2-1 whole beet)
  • Diced jalapeno ( use 1/4-1 whole jalapeno depending on how much spice you like)
  • Diced ginger (about a thumb of ginger or 1 inch)
  • Sliced Radish (1-2 radishes)

Dressing for Detox Salad:

  • Olive oil (a few TBSP depending on size of salad maybe 2)
  • Apple Cider Vinegar( 1 TSP)
  • Whole Lemon + 2 tsp Dijon mustard
  • If you do not have olive hache, use other spices like oregano, pepper, garlic powder, basil, pinch salt, maybe a pinch cayenne pepper (use majority oregano(1 tsp) and mix in some pinches of the other spices, nothing too fancy here.

Directions:

Wash all produce. Put greens in a big bowl. Shred carrot and beet. Dice jalapeno, ginger, and slice the radish. Mix dressing together in a small bowl and pour over salad. TADA you are DETOXED.
